When I moved to the Catskills and started our farm, I would finish my long days by sitting by a fire with a crisp beer, some cheese, and a nice dry cured sausage. This well-spiced salami is the perfect accompaniment to any campsite meal. We raise our pigs on Hanover Mountain, where they forage under oak, beech, and hickory trees.
